Courgette – Zucchini – Tikvice

I know a lot of people who really do not like this vegetable, aubergines also.

I am a big fan of all vegetables, also meat, and when is a season, I like to use them in many ways. It is very well known that Italians are using Zucchini in many ways, also flowers are fried or added last minute to pasta dishes.

There is one way of preparing courgette that I have not seen done outside of Croatia. Maybe I am wrong, but as I do not watch live Tv, and I do not have any social media profile, I am not quite sure that this mine statement is correct.

Anyway, there is a recipe how to make Tikvice as a side dish, like we prepare it here in Croatia.

All my recipes are usually for two persons, and by multiplying you can come to 4 more people, or by adding one third of original recipe you can come to three persons, simple.

Mison en place:

1-2 small zucchini

1-2 cups of passata

1 table spoon of tomato passata

2 cloves of garlic

Parsley

Salt and pepper

Time for cooking and preparation about 60 min

Preparation:

In a frying pan add some good olive oil and chopped garlic. As soon you can smell aroma of garlic add you chopped courgettes chopped in cubes.

Vegetables like this are full with water. Just continue frying them on medium heat, and cover them with the lid. They will soon release a lot of water.

After 10-15 min add tomato, salt and pepper to taste and continue cooking for another 30 minutes.

In the end add some chopped parsley.

This is in Croatia usually served as a side dish. It can go with a fry fish or with the grilled pork. Pork is a sweet meat and this dish is little bit sour.

I have served it this time with the fish.
